Muharram Special Recipe for Chonge

Chonge

Chonge are sweet puris dunked in jaggery syrup and pure desi ghee. Moreover, they are prepared during the month of Muharram.

Ingredients:
1 Bowl Whole Wheat Flour
1/2 Cup Jaggery
1 tsp Feenal Seeds & Dry Ginger Powder
1/2 Cup Grated Dry Coconut
1/2 Cup Roasted Chana Dal/Bengal Gram Powder
Poppy Seeds As required
Salt to taste
Ghee as required

Method:
1. Boil jaggery and water together on a low flame to make syrup.
2. Make two string jaggery syrup.
3. After 5 minutes, turn off the flame and keep this syrup aside.
4. Now start kneading the dough and add a pinch of salt.
5. Prepare the dough and divide it into sizeable chunks to be rolled into chapatis.
6. Start rolling chapati or roti.
7. Rotis should be thick.
8. Roast the Rotis on a griddle.
9. Make sure that the rotis don’t fluff up.
10. Now remove them from heat and start making spiral design on the rotis.11. Pour jaggery syrup over the rotis.
12. Spread dry coconut over all of them.
13. Sprinkle dried ginger and fennel seeds powder, poppy seeds, roasted Chana Dal Powder over the top.
14. Finally pour Ghee.
15. Let the rotis sit for 5 to 6 hours.
16. Chonge is ready.

Malida

You can have Malida, a traditional sweet, prepared on special occasions especially during Muharram. Moreover, this is a whole meal in itself; it’s nutritious, healthy and fillings sweet for both kids and adults!

  • Step 1 Mix the flour. To make this quick recipe, just mix wheat flour, semolina, ghee, 1/2 jaggery powder, cardamom powder and mix it nicely.
  • Step 2 Make parathas. Knead a dough by adding milk. Once the dough is kneaded, keep it aside. Extract the dough balls, using a rolling pin flatten them and using ghee make parathas.
  • Step 3 Malida is ready. Next, break the parathas and grind them into a coarse mixture. Next, add in the jaggery powder, cardamom powder and dry fruits and grind again. Malida is ready server it the way you like and enjoy!
Tips
  1. You can also make laddos and store these as anytime desserts.
  2. To make this dish, you can also use leftover rotis.
